Make these and your friends and family will love you forever.
(This recipe can easily be adapted to be dairy or gluten-free)
Here’s what you need to make about 8 medium-sized scones.
- 225g/8oz Spelt flour
- Pinch of salt
- 1 level tablespoon of baking powder
- 25g/1oz butter
- 100g/4oz of grated cheese plus a little extra for topping the scones
- 1 large egg
- 150ml/1/4pint of milk
- a handful/bunch of wild garlic – finely chopped
Preheat your oven to 200 deg c/gas 7
In a large bowl mix all the dry ingredients together.
Rub in the butter.
Mix in the finely chopped wild garlic and grated cheese until everything is combined well.
Crack the egg into a measuring jug and top up with milk until it measures 150ml/1/4 pint of liquid.
Add the wet mixture (egg and milk) to the dry mixture and mix until a sticky dough forms.
On a floured surface turn out the dough and give it a quick knead (don’t overwork the dough, you just want to bring it together)
Shape the dough into a large round approx 1″ in depth
Cut out rounds with a pastry cutter – you’ll get about 6-8 scones depending on the size of your cutter.
Brush each scone with milk and sprinkle the top with grated cheese.
Place the scones on a lined baking sheet and pop in the oven for around 15-20mins or until golden in colour.
The only thing left to do now is to take your time and enjoy every mouthful, watch out they are incredibly moreish!
